Salmon Patties
Ingredients:
- 1 (15oz) can pink salmon, flaked and checked carefully for bones
- 1 med onion OR three green onions
- 1/4 C Saltine Crackers or bread crumbs
- 1 stalk celery, diced
- 2 eggs, beaten
- 1 TBSP lemon juice
- 1/2 green pepper or spinach, diced
- 1/4-1/2 C Cornmeal
- Salt and pepper to taste
- 1/4 C oil
Lemon Dill Sauce
Ingredients:
- 1/2 C plain yogurt
- 1 TBSP mayonnaise.
- 1TBSP Dijon or Spicy Mustard
- 1 TBSP Lemon Juice
- 2 TBSP Chopped fresh dill (or 1 TBSP dried dill)
Combine all ingredients in small bowl and refrigerate at least 15 minutes before serving.
