Salmon Patties with Dill Sauce

Salmon Patties with dill sauce is a super easy dinner for days of Catholic fasting.  Add a salad and your favorite vegetable and you have a healthy, delicious and frugal meal!


Salmon Patties

Ingredients: 

  • 1 (15oz) can pink salmon, flaked and checked carefully for bones
  • 1 med onion OR three green onions
  • 1/4 C Saltine Crackers or bread crumbs
  • 1 stalk celery, diced 
  • 2 eggs, beaten
  • 1 TBSP lemon juice
  • 1/2 green pepper or spinach, diced
  •  1/4-1/2 C Cornmeal
  •  Salt and pepper to taste
  • 1/4 C oil
Mix all  ingredients (EXCEPT for cornmeal and oil) together in large bowl.  form into patties and coat in cornmeal.  Fry in oil over med high heat until golden brown. Serve with Lemon Dill Sauce.

Lemon Dill Sauce


Ingredients:

  • 1/2 C plain yogurt 
  • 1 TBSP mayonnaise.
You can substitute 1/2 C sour cream in place of yogurt and mayonnaise!
  • 1TBSP Dijon or Spicy Mustard
  • 1 TBSP Lemon Juice
  • 2 TBSP Chopped fresh dill (or 1 TBSP dried dill)

Combine all ingredients in small bowl and refrigerate at least 15 minutes before serving.  

Easy, Summer Fresh Eggs with Tomato and Chives

     I have a small herb and vegetable garden and love to incorporate fresh produce into my summer cooking.  Eggs with chives and tomato is one of my absolute favorites!  The aroma of chives and olive oil is fantastic and this light, summery version of a country favorite is my favorite start to a summer day.

Ingredients:
2 eggs
salt and pepper to taste
1/2 tomato
1/2 tbsp minced fresh chives
EVOO
  
 To start, pour a small amount of Extra Virgin Olive Oil i(a couple tsp) into a skillet and heat over medium until hot.  Add salt and pepper to the oil.  Crack eggs and set into skillet.  Salt and pepper the eggs.  Cook eggs over medium heat until whites are almost cooked, then flip eggs, taking care not to break the yolk.  Sprinkle a bit more salt and pepper if needed. Allow to cook about 3 more minutes, or until yolk is cooked through.  Drizzle another tsp olive oil over cooked eggs and Top 2 Eggs with 1/4 c chopped tomato, 1 tbsp fresh chives, and 2 tbsp mozzerella cheese.

Fantastic Pizza and Breadsticks

We have pizza night about once a week and i have tried several difference dough recipes of the past year or so. This recipe is by far the best, although it does take some early afternoon prep!  I use a bread machine for the mixing and kneading, which makes my job much easier.  This recipe is adapted from the  Farm Journal's Country Cookbook, which I highly recommend over any modern cookbook on the market.
